The diagram depicts a sequential process of manufacturing cheese, consisting of two main stages, commencing with processing fresh milk and culminating in cheese being ripened.
In the first stage, raw milk is processed. In most cheese-making methods, the milk undergoes pasteurization, standardization, and filtration, all of which are skipped in traditional procedures. The milk is then poured into a tank which contains fermenting microorganisms and enzymes in order to make the liquid thicker. Once the milk gets thick enough, curds and whey are formed before they are separated using cutting, stirring and cooking techniques.
Moving on to the second stage, once the whey has been drained, the remaining curds undergo milling and are then seasoned with salt, resulting in fresh cheese such as cottage and cream cheese. The process continues as the mixture is poured into metal molds and pressed to remove additional whey. Finally, the cheese is left to ripen , resulting in the final product that is ready for consumption.
